  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup melted dark chocolate
  • 1/2 cup chocolate chips (milk or semi-sweet)

Instructions

  1. Preheat Oven:
Preheat your oven to 325ยฐF (160ยฐC).
  2. Make Crust:

    • Mix the cookie crumbs and melted butter in a bowl until well combined.
    • Press the mixture into the bottom of 12 muffin cups lined with paper liners to form the crust.

  3. Mix Filling:

    • In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
    • Add the eggs one at a time, ensuring each is well incorporated before adding the next.
    • Stir in the vanilla extract, sour cream, and melted dark chocolate until the mixture is smooth and uniform.

  4. Add Chocolate Chips:

    • Fold in the chocolate chips gently to ensure they are evenly dispersed throughout the mixture.

  5. Bake:

    • Spoon the filling mixture over the prepared crusts, filling each muffin cup evenly.
    • Bake in the preheated oven for 20-25 minutes, or until the centers of the cheesecakes are set and firm to the touch.

  6. Cool and Chill:

    • Allow the cheesecakes to cool at room temperature for about an hour.
    • Transfer them to the refrigerator and chill for at least 2 hours before serving to allow the flavors to meld and the texture to set.
