Instructions
- Preheat Oven:
Preheat your oven to 325ยฐF (160ยฐC). - Make Crust:
- Mix the cookie crumbs and melted butter in a bowl until well combined.
- Press the mixture into the bottom of 12 muffin cups lined with paper liners to form the crust.
- Mix Filling:
- In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add the eggs one at a time, ensuring each is well incorporated before adding the next.
- Stir in the vanilla extract, sour cream, and melted dark chocolate until the mixture is smooth and uniform.
- Add Chocolate Chips:
- Fold in the chocolate chips gently to ensure they are evenly dispersed throughout the mixture.
- Bake:
- Spoon the filling mixture over the prepared crusts, filling each muffin cup evenly.
- Bake in the preheated oven for 20-25 minutes, or until the centers of the cheesecakes are set and firm to the touch.
- Cool and Chill:
- Allow the cheesecakes to cool at room temperature for about an hour.
- Transfer them to the refrigerator and chill for at least 2 hours before serving to allow the flavors to meld and the texture to set.
