Ingredients

  • Fresh Strawberries: 2 cups (about 300-350g), washed, hulled, and roughly chopped. If using frozen strawberries, you can use them directly, though they might release a bit more liquid. The vibrant red hue and natural sweetness of ripe strawberries are key to the appeal of these bites. Look for berries that are firm, plump, and have a deep red color with a fragrant aroma.
  • Plain Greek Yogurt: 1 ยฝ cups (about 340-360g). Full-fat Greek yogurt will result in the creamiest, most ice-cream-like texture. Low-fat or non-fat versions can also be used if you prefer a lighter option, though the texture might be slightly icier. The tanginess of Greek yogurt beautifully complements the sweetness of the strawberries.
  • Sweetener (Optional, to taste): 2-4 tablespoons of honey, maple syrup, or agave nectar. The amount will depend on the sweetness of your strawberries and your personal preference. You can also use powdered sugar or a sugar-free alternative like stevia or erythritol, adjusting the quantity accordingly. Taste the mixture before freezing to ensure itโ€™s sweetened to your liking.
  • Vanilla Extract: 1 teaspoon. A good quality vanilla extract enhances the fruity flavors and adds a warm, aromatic depth to the bites. It subtly rounds out the tartness of the yogurt and berries.
  • Lemon Juice (Optional): 1 teaspoon of fresh lemon juice. This is a secret weapon! A small amount of lemon juice brightens the strawberry flavor, making it more vibrant and pronounced. It also helps to balance the sweetness.

Instructions

  1. Prepare the Strawberries:

    • Wash your strawberries thoroughly under cool running water.
    • Hull them by removing the green leafy tops. You can do this with a small paring knife or a strawberry huller.
    • Roughly chop the strawberries. If you prefer a smoother texture in your bites, you can chop them smaller. For a chunkier, more rustic bite, leave some larger pieces.

  2. Blend the Strawberries (Optional but Recommended for Smoothness):

    • Place the chopped strawberries into a blender or food processor.
    • Add the optional fresh lemon juice, if using. This little addition truly makes the strawberry flavor pop.
    • Blend until the strawberries are mostly smooth but still have a little texture, or blend until completely smooth if you prefer no chunks. If you don’t have a blender, you can mash the strawberries very well with a fork or potato masher in a bowl for a more rustic, chunky texture.

  3. Combine Ingredients:

    • In a medium-sized mixing bowl, combine the Greek yogurt, the blended (or mashed) strawberries, vanilla extract, and your chosen sweetener (honey, maple syrup, or agave).
    • Start with the lower amount of sweetener and add more to taste. Remember that foods taste less sweet when frozen, so you might want it slightly sweeter than you’d prefer at room temperature.
    • Gently fold the ingredients together with a spatula until well combined. You can aim for a uniform pink mixture or leave some streaks of strawberry puree for a marbled effect. Be careful not to overmix, especially if you want to maintain some of the yogurt’s thickness.

  4. Fill the Molds:

    • Carefully spoon or pipe the strawberry yogurt mixture into your silicone molds. Ice cube trays are perfect for bite-sized treats. Mini muffin tins (silicone or lined with mini paper cups) also work well.
    • If you don’t have molds, you can spread the mixture onto a small baking sheet lined with parchment paper to about ยผ to ยฝ inch thickness. Once frozen, you can break this into “bark” pieces.
    • Tap the molds gently on the counter a few times to release any air bubbles and to help the mixture settle evenly. This ensures a denser, creamier bite.

  5. Freeze:

    • Place the filled molds (or baking sheet) into the freezer.
    • Freeze for at least 4-6 hours, or until completely solid. The exact time will depend on the size of your bites and the temperature of your freezer. For best results, freezing overnight is recommended.

  6. Demold and Store:

    • Once the bites are fully frozen, carefully remove them from the silicone molds. If using a baking sheet for bark, lift the parchment paper and break the frozen yogurt into irregular pieces.
    • The bites are best enjoyed straight from the freezer.
    • Transfer the frozen Strawberry Yogurt Bites to an airtight, freezer-safe container or a zip-top freezer bag. This will prevent freezer burn and keep them fresh.
