  • 1/2 cup chocolate chips or fruit
  • Cooking spray or butter

Instructions

  1. Mix Batter: In a bowl, combine the pancake mix, milk, and egg. Stir the mixture until smooth. If you prefer a plant-based option, substitute the milk with your favorite plant-based alternative and use applesauce in place of the egg.
  2. Prepare Pan: Heat a non-stick skillet over medium heat. Grease it with cooking spray or butter to ensure the pancake bombs don’t stick and cook evenly.
  3. Cook Pancakes: Pour a small amount of batter into the skillet. Add a spoonful of chocolate chips or your chosen fruit in the center, then cover with more batter. This creates the ‘bomb’ effect, with the filling encased in the pancake.
  4. Flip: Cook for 2-3 minutes until bubbles form on the surface, then carefully flip the pancake and cook for another 2-3 minutes until golden brown.
  5. Serve: Enjoy your pancake bombs warm, topped with syrup or fruit, for an extra burst of flavor.
