One Pot Taco Spaghetti Recipe

  • 12 oz spaghetti
  • 1 lb ground turkey or chicken
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 packet taco seasoning
  • 1 can diced tomatoes (15 oz)
  • 4 cups broth (chicken or vegetable)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, for garnish

Instructions

  1. Cook the Meat:

    • In a large pot, cook the ground turkey or chicken over medium heat until it is browned. This usually takes about 5-7 minutes.
    • Add the chopped onion and minced garlic to the pot. Sauté them until the onion becomes soft and translucent, another 3-5 minutes.

  2. Add Seasoning and Liquids:

    • Stir in the taco seasoning, ensuring that the meat and onions are well-coated.
    • Add the diced tomatoes, chicken or vegetable broth, spaghetti, black beans, and corn to the pot. Stir to combine.

  3. Cook the Spaghetti:

    • Bring the mixture to a boil. Once boiling, reduce the heat, cover the pot, and let it simmer for about 12-15 minutes. Stir occasionally to prevent the spaghetti from sticking to the bottom of the pot.
    • Cook until the spaghetti is tender and has absorbed most of the liquid.

  4. Finish with Cheese:

    • Stir in half of the shredded cheese until it melts into the spaghetti, creating a creamy texture.
    • Serve the spaghetti topped with the remaining cheese and garnish with fresh cilantro.
