Instructions
- Prepare the Corn: If using fresh corn, grill or boil it until cooked. Once done, allow it to cool slightly and carefully cut the kernels off the cob. If using canned or frozen corn, ensure itโs drained and thawed, respectively.
- Combine Ingredients: In a large mixing bowl, add the corn, mayonnaise or Greek yogurt, cotija or feta cheese, chopped cilantro, lime juice, and chili powder. Season the mixture with salt and pepper to taste.
- Mix Thoroughly: Stir the ingredients together until well combined, ensuring the corn is evenly coated with the creamy dressing.
- Serve or Chill: You can serve the salad immediately for a fresh and vibrant experience. Alternatively, chill it in the refrigerator for about 30 minutes to allow the flavors to meld together for a richer taste.
