  1. In a large skillet brown ground turkey until done. Drain grease. Start by preparing the sausage. Place your ground turkey sausage, or your chosen breakfast meat, in a large skillet. Using a spoon or spatula, break up the sausage into smaller pieces. Cook the sausage over medium heat, stirring occasionally to ensure even browning. Continue cooking until the sausage is fully cooked through and no longer pink. This typically takes about 7-10 minutes, depending on the type of sausage and the heat of your skillet. Once cooked, it’s crucial to drain off any excess grease. Tilt the skillet carefully and spoon out the grease, or transfer the cooked sausage to a colander to drain thoroughly. Draining the grease is important for a healthier burrito and prevents the filling from becoming greasy and heavy. Set the cooked sausage aside while you prepare the eggs. Using a large skillet ensures that the sausage cooks evenly and efficiently. If you are using a leaner sausage like ground turkey, you may not have as much grease to drain, but it’s still a good practice to remove any excess.
  2. In a small bowl mix together eggs, milk and salt and pepper until combined. Cook over medium heat until cooked through. Add ground turkey and remove from heat. While the sausage is cooking, prepare the egg mixture. In a small to medium-sized bowl, crack the 10 eggs. Add 1/4 cup of milk, a pinch of salt, and a pinch of pepper. Whisk all the ingredients together vigorously until they are well combined and slightly frothy. This ensures that the milk is fully incorporated and the eggs are evenly seasoned. Once the sausage is cooked and drained, use the same skillet (no need to wash it, as the sausage flavor will enhance the eggs!) to cook the eggs. Place the skillet back over medium heat.   3. Add egg mixture to the center of tortilla. Top with cheese. Roll up burrito style and place either in a Panini press or place on skillet with medium heat until slightly browned and crispy. Serve with fresh fruit or yogurt. Now it’s time to assemble your breakfast burritos. Warm your flour tortillas slightly to make them more pliable and prevent tearing. You can warm them in a dry skillet for a few seconds per side, in the microwave wrapped in a damp paper towel, or directly over a low gas flame for a charred flavor. Lay a warmed tortilla flat on a clean surface. Spoon a generous amount of the egg and sausage mixture into the center of the tortilla. Be careful not to overfill, as this can make the burrito difficult to roll and prone to bursting. Top the egg and sausage mixture with a generous sprinkle of shredded Colby Jack cheese (about 1/4 cup per burrito). To roll the burrito, fold in the sides of the tortilla over the filling, and then roll tightly from the bottom up, tucking in the filling as you go. Place the rolled burrito seam-down. For a slightly browned and crispy exterior, you have two options. You can use a Panini press, which will evenly press and toast the burrito. Alternatively, you can place the burritos seam-down in the same skillet you used for the sausage and eggs. Cook over medium heat for 2-3 minutes per side, or until golden brown and crispy, and the cheese is melted and gooey inside. Serve the breakfast burritos immediately while they are warm and the cheese is melted.
