Crock Pot Creamy Cajun Chicken Pasta Recipe

  • Author: David

Ingredients

Scale

  • 1 lb chicken breast, diced
  • 2 cups penne pasta
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tbsp Cajun seasoning
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. Prep Ingredients: Begin by dicing the chicken breast, chopping the bell pepper and onion, and mincing the garlic cloves.
  2. Layer the Crock Pot: Place the diced chicken, chopped bell pepper, onion, and minced garlic into the crock pot.
  3. Add Seasonings and Liquids: Pour in the can of diced tomatoes (including the juice) and chicken broth. Sprinkle the Cajun seasoning, and add salt and pepper to taste. Stir the mixture well to ensure the seasonings are evenly distributed.
  4. Slow Cook: Cover the crock pot with its lid and set it to cook on low for 4 hours. This slow cooking process will infuse the chicken and vegetables with rich flavors.
  5. Add Pasta and Cream: After 4 hours, stir in the penne pasta and heavy cream. Make sure the pasta is submerged in the sauce for even cooking.
  6. Continue Cooking: Cover the crock pot again and cook for an additional 30 minutes, or until the pasta is tender and cooked through.
  7. Finish with Cheese: Once the pasta is done, mix in the shredded cheddar cheese until it melts into the sauce, creating a creamy, cheesy delight.
  8. Serve and Enjoy: Serve the creamy Cajun chicken pasta hot, garnished with extra cheese or fresh herbs if desired.
